Farmer's Casserole

One of the girls on the Bump board posted a list of recipes for make ahead freezer meals, I am trying them out! This is the first one I've tried, hope it's yummy!

Farmer's Casserole
3 cups frozen shredded hash brown potatoes (24 oz bag)
3/4 cup shredded Monterey Jack cheese (3-4 oz)
3/4 cup shredded cheddar cheese (3-4 oz)
1 cup diced ham or Canadian-style bacon
(5 oz)1 4.5 oz can mild green chiles (optional)
1/4 cup green onions, sliced
4 beaten eggs (or 1 cup frozen egg product)
1 12 oz can evaporated milk
1/4 t pepper
1/8 t salt

Cooking day instructions:

Grease a 2 quart square baking dish. Arrange potatoes evenly in bottom of dish. Sprinkle with cheeses, ham, green chiles, and green onions. In medium mixing bowl, combine eggs, milk, pepper and salt. Pour egg mixture over potato mixture in dish. (If not freezing, cover and chill several house or overnight, then follow serving day suggestions.) Freeze.

Serving day instructions:

Thaw completely. Bake uncovered in a 350-degree oven for 40-45 minutes or until center appears set. Let stand 5 minutes before serving. If you prefer extra shredded cheese can be sprinkled on top during the last 15 minutes of baking.

Sweet and Spicy Bacon Chicken


Sweet and Spicy Bacon Chicken

This was a quick and easy dish to make while we were working on remodeling our house. I had everything on hand and it made for a wonderful dish!

4 chicken breasts cut in thirds (12 pieces)
Bacon slices
salt and pepper to taste
garlic powder
chili powder
brown sugar

Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish....make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine.

Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy.


Update 7/19/10
I made this again last night and made it with chicken tenders and used about 10 slices of bacon cut in 1/2. I also cooked them at 350 and it only took about 20 minutes (I used my meat thermometer) I have got to remember this recipe...so good!

Baked chicken-bacon purses

This recipe came to be after having leftover ingredients from the Baked Crab Rangoons. I started playing in the kitchen with ingredients I had on hand and this is what I came up with. We had a fun dinner consisting of appetizers!

12 wonton wrappers
4 oz cream cheese
1 can diced chicken meat
1/4 cup bacon pieces (I used the bacon in the refrigerator section that's already in pieces)
sprinkle of garlic & herb seasoning

Preheat oven to 350.
Put the wonton wrappers in muffin tins.
Mix together remaining ingredients.
Put about a tablespoon in each wonton wrapper then fold corners together to form a "purse".
Bake for about 18-20 minutes.
