Slow Cooker Steak Tacos

I was on the hunt for a slow cooker recipe for steak tacos for Cinco De Mayo. So I turned to my girls on the What's Cooking board and once again they didn't fail me! This recipe made my steak so tender, it was literally falling apart as I tried to cut it! We used some sour cream, cheese, and rice in the taco's, oh man it was so tasty!


Adapted from Jaime Cooks

About 3 pounds of Charcoal Steak
1 packet reduced sodium taco seasoning
2 Tbl minced garlic
1 cup water

Steak, mushrooms and gravy

This was super easy and it was actually really good!

I used 4 cheap steaks
1 jar beef gravy
1 can mushroom pieces

I combined all of the above ingredients in my crockpot and set it to cook. My cook times were about 6 hours on low (my crockpot cooks really hot).

We served this shredded over mashed potatoes!

Italian Steak Sandwiches

So I had an Italian Steak Sandwich at Lorenzo's a couple of weeks ago and it was so good I had to make them for me and the hubby!

1 lb tip steak (I had no idea what steak to get so I asked one of the butcher's at my local Hy-vee store and this is what he recommended)
1 can beef broth
1 can mushrooms
2 tsp oregano
2 tsp garlic pepper (thanks dad for telling me to buy this stuff, it's awesome!)

I put all of the above ingredients in my large crockpot and put it on low!

I made this last night and then I went to sleep and didn't tell hubby I had made it so he picked up dinner on his way home from work! So I will post pictures tonight after we eat!

Bife Trinchado--Portugese Steak

Bife Trinchado--Portugese Steak

I am so happy I made this and so happy I found the Full Bellies, Happy Kids blog! Me and Kevin absolutely loved this meal and we will make it again for sure. I loved my first Portugese dish and hope to make more!

1 lb cubed beef (I used eye round steak and cut it into cubes)


3 TBSP Worcestershire sauce


white wine (I used about 1/2 cup)


crushed garlic (I used about 2 tsp)


bay leaf (1)


salt (couple of pinches)


pepper (1 pinch)


paprika (I used about 1 tbl)


flour (enough to cover all meat, just eyeball it you can always add more)


1 medium onion sliced thinly (we didn't use)


Homemade Fries




In a bowl combine the beef, Worcestershire sauce, garlic, bay leaf, wine, salt and pepper and paprika. Place in the refrigerator for an hour or two so the flavors can really sink into the meat. The best way is to leave it overnight, the longer you leave the marinade, the better it tastes and the more tender the beef will become.




In a skillet, add some olive oil and a little butter. Grab the steak out of the refrigerator, add some flour and using your hands toss well to coat the beef. Pour into the skillet. Brown the beef well on both sides, about 3 to 4 minutes.




Remove the beef cubes and reduce heat.




Add the sliced onions and some more olive oil and butter.--I skipped




I usually keep some water next to me and add a little at a time, just enough to keep a good amount of sauce in the skillet.Cook the onions until soft, then add the beef to the pan again, mix well and let simmer for about 20 minutes. Remember to keep checking the pan and adding a little water, you want to end up with a lot of sauce.




Ladle a good amount of beef and gravy into a plate, lay the fries around the meat and serve immediately.

Cheddar-Potato-Steak soup

I always love meals my husband goes back and gets seconds of, always makes me know he likes it! This was one of those meals. I have admited on here I am not a soup fan, however even I liked this one! The original was from Gooseberry Patch once again, but I made some alterations.

1 30 oz bag of frozen hashbrowns
2 cans chicken broth
1 cup water
***we didn't use but it calls for celery and onion at this point****

Mix above ingredients together and place on low for 6-8 hours.

8 oz bag shredded cheddar cheese
1 cup milk
3 Tbl flour

Mix flour into milk. Then add cheese and milk mixture to crockpot and stir. Place on high for 20 mins, until cheese is melted.

I then added another 3/4 can of chicken broth because it was to thick for my liking. I added about 1 1/2 lbs of cooked steak cut into bite size pieces & I added one small bag of frozen corn (which was quite tasty in it). And put it on low until it was time to eat dinner.

Top with bacon bits and chopped green onions.

Easy Week

Okay so it's been an easy cooking week and therefor I have taken no pictures!

Monday I made Chicken Fingers:
1 package of Ritz crackers
1 tsp parsley flakes
1 Tbl garlic powder
2 egg whites
2 Tbl water
I used 2 lbs of chicken tenders

Crush Ritz crackers, stir in parsley and garlic powder. In another bowl whisk together egg whites and water. Put chicken into egg mixture then dredge in cracker mixture and lay on pan sprayed with cooking spray. Bake 450 for about 15 minutes or until no longer pink in middle.

I served the fingers with some store bought Sweet and Regular fries!

Tuesday I made a crockpot pot roast and roasted potatoes
for the roast: Put a pot roast in the crockpot, I poured a can of Cherry Coke over it then cover with BBQ sauce. Set on low and cooked about 9 hours then turned to warm until we were ready to eat.

So then I went to make the roasted red potatoes only to find my potatoes shriveled up...so off to the store I go in my night clothes and no bra! I set the oven to about 425 and when I got home scrubed the potatoes, then cut them into bite size pieces, tossed them with some EVOO and garlic & herb seasoning. Put them on a pan sprayed well with cooking spray and cooked them for about 30 minutes.

I served this with peas (for me) and green beans (for my hubby)
