Fiesta Platter


This is another Gooseberry Patch Speedy Suppers recipe. This will be our new fave recipe for Nachos, they were AWESOME!

1 lb gound beef
1 packet Taco Seasoning
1 can tomatoes with chili's
1 can chili with no beans
16 oz Velvetta (I uses the Mexican)
sour cream, salsa, black olives

Brown ground beef. Add packet of taco seasoning. Add cans of tomatoes and chili. Once heated through add Velvetta. Once melted serve over tortilla chips with your chosing of toppings (sour cream, avocado, black olives, salsa)

Tortilla Egg Scramble


I found this in Gooseberry Patch and the same night saw it on Rachel Ray. This is my variation on it!

2 large tortilla's cut in bite size strips (I used Mission Jalapeno and Sun-dried tomato and basil)
I used 7 eggs
dash of milk
2 large spoonfulls of Queso dip
2 sausage patties (the microwave kind) cooked and crumbled

You can also use salsa, but we didn't have any.

Spray a skillet with a healthy dose of Pam then heat tortilla's until they start to get crispy. Scramble eggs in a bowl with a dash of milk. Once tortillas are ready pour in eggs. Let set for a minute then scramble everything together. Stir in queso and sausage. Once eggs are cooked and everything is heated through, serve!

Country Sausage Gravy


I can not believe I finally made home-made sausage gravy and can't believe even more how good and easy it was!

1 lb sausage
2 cups milk
1/2 cup flour
salt & pepper to taste
1 can biscuits

Brown sausage in skillet over med heat, drain. Add flour and cook 1 minute or until it starts to brown. Slowly add milk. Season with salt and pepper and cook until it has thickened.

Cook biscuits while making the gravy. Serve gravy over biscuits.

Weekly Menus 7/14-7/18

mon: Chicken Parmigan with garlic bread
tues: fiesta platter
wed: bacon wrapped pork with roasted asparagus and potatoes
thurs: Homestyle meatballs and gravy over egg noodles
fri: probably out or pizza

Beef pot pie

16 oz frozen potato, pepper and onion mixture
2 T water
1/2 t dried thyme
12 oz jar mushroom or beef gravy
1 1b roast beef cubed
2 8 oz refrigerated crescent rolls

Combine potato mixture, water and thyme in skillet. Cook over medium heat until veggies are thawed, about 3 mins. Stir in gravy; bring to a boil. Remove from heat. Add beef; mix well. Seperate cresent rolls into 8 triangles per each tube. Put one tube on the bottom of a 9X9 dish. Pour potato and beef mixture over it. Place the other tube of crescent rolls over mixture. Bake at 375 for 17 to 19 mins or until rolls are golden.

Depending on what kind of meat you use in this recipe you may want to cook the meat beforehand for a few minutes.

Cheese & Bean Tortellini Soup

Another great one from my Gooseberry Patch Speedy Suppers cookbook. I will definitely make this one again!

2 T olive oil
4 cloves garlic minced
1 T fresh Thyme chopped
1/4 t red pepper flakes
6 C chicken broth
8 oz pkg refrigerated cheese tortellini
15 oz can cannellini beans, drained and rinsed
1/2 c parmesan cheese

Heat oil in large soup pot over medium-high heat; add garlice, thyme and red pepper flakes. Cook until garlic is fragrant. Add chicken broth; increase heat to high and bring to a boil. Stir in tortellini; reduce heat to medium and simmer for 4 minutes. Add beans. Simmer until tortellini is tender, about one minute. Ladle soup into bowls; sprinkle with cheese.

Originally recipe calls for onion and spinach but hubby won't eat either.

Weekly Menu 7/8-7/12

Tues: Fast & Easy Chicken & Noodles with Crescent Rolls
Wed: Breakfast for dinner, tortillas, eggs and salsa. Breakfast potatoes.
Thurs: Easy Chicken Parmesan with green beans and garlic bread.
Fri: Hot dogs on the grill.
Sat: BBQ at Kevin's uncles.

Fast and easy Chicken & Noodles

This is another recipe from the Gooseberry Patch Speedy Suppers cookbook that has been my bible, especially with being down from my MS, it's been a lifesaver these last few months! This is yummy and easy! There are some additions/changes I have made, but I think for the better =)

1 bag frozen egg noodles
1 1b. boneless chicken breasts cut into bite size pieces (I used 3 chicken breasts)
pam for pan
1/2 tsp garlic salt
1 can cream of chicken soup
1/2 cup milk
1/2 cup parmesan cheese
1 can cream of corn

Cook egg noodles according to package.
Cook chicken in Pam over med-high heat until cooked through and golden. About 1/2 way through sprinkle the garlic salt over the chicken for flavor.
Drain egg noodles and put chicken in pot and the rest of the ingredients. Cook until heated through.

I served this with Crescent Rolls that had been covered with butter and parmesan cheese before baking, they were DELICIOUS!
