Chocolate Coconut Coffee Cake


My mom used to make this every Christmas Day morning, so when we started having our own Christmas mornings I had to get the recipe from her, it is sooooo good.

2 cups biscuit/baking mix
1/2 cup sugar, divided
1 egg
3/4 cup milk
3 tablespoons butter, melted, divided
1/3 cup semisweet chocolate chips
1/3 cup flaked coconut
1/4 cup chopped pecans

Directions
In a large bowl, combine the biscuit mix and 1/4 cup sugar. Whisk the egg, milk and 2 tablespoons butter; stir into dry ingredients just until moistened. Pour into a greased 8-in. square baking dish. Pour chocolate over the batter; cut through batter with a knife to swirl the chocolate.
Combine the coconut, nuts, and remaining sugar and butter; sprinkle over the top. Bake at 400° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Yield: 9 servings.

My hubby's breakfast treats


My mother-in-law makes these for my hubby every time we go down to visit them. I finally decided to start making them and I'm glad I did as this gets my hubby to eat breakfast everyday so I will continue making them.

1 package smoked sausage
1 container refrigerator biscuits (any kind will work)

If your container of biscuits have 10 in them then cut your smoked sausage into 10 pieces (same for if they have 8, do 8. etc). Smash a biscuit in the palm of your hand into an oval shape. Place a slice of sausage into the top of the biscuit and roll up. You can totally enclose the sausage or leave some open. You can also place some cheese into the middle as well. I usually take a slice of American cheese and fold into thirds and place a third in each biscuit.
Bake at 375 for about 13-15 minutes until nice and golden brown!

Pizza Dough


I have been on the hunt for a good pizza dough for awhile now. I have tried 2 others that just didn't make the grade, this one however will remain front and center in my recipe book! The crust is crispy on the outside and soft and chewy on the inside, and the best thing about homemade pizza is you can put whatever you want on the top, so for us it's lots of cheese then pepperoni for Kevin and anything for me, this night it was garlic and green olives! I just made it on a cookie sheet and used all of the dough because we like a thicker crust. I baked it on 400 for about 20 mins.

Makes enough for 3 medium pizzas.

We find the food processor is the best tool for making pizza dough. However, only a food processor with a capacity of at least 11 cups can handle this much dough. You can also knead this dough by hand or in a standing mixer (see the variations that follow). Unbleached all-purpose flour can be used in a pinch, but the resulting crust will be less crisp. If you want to make pizza dough in the morning and let it rise on the counter all day, decrease the yeast to 1/2 teaspoon and let the covered dough rise at cool room temperature (about 68 degrees) until doubled in size, about 8 hours. You can prolong the rising time even further by refrigerating the covered dough for up to 16 hours and then letting it rise on the counter until doubled in size, which will take 6 to 8 hours.

1/2 cup warm water (about 110 degrees)
1 envelope (about 2 1/4 teaspoons) instant yeast
1 1/4 cups water, at room temperature
2 tablespoons extra-virgin olive oil
4 cups (22 ounces) bread flour, plus more for dusting work surface and hands
1 1/2 teaspoons salt
Olive oil or nonstick cooking spray for oiling the bowl

1. Measure the warm water into a 2-cup liquid measuring cup. Sprinkle in the yeast and let stand until the yeast dissolves and swells, about 5 minutes. Add the room-temperature water and oil and stir to combine.

2. Process the flour and salt in a large food processor, pulsing to combine. Continue pulsing while pouring the liquid ingredients (holding back a few tablespoons) through the feed tube. If the dough does not readily form into a ball, add the remaining liquid and continue to pulse until a ball forms. Process until the dough is smooth and elastic, about 30 seconds longer.

3. The dough will be a bit tacky, so use a rubber spatula to turn it out onto a lightly floured work surface. Knead by h and for a few strokes to form a smooth, round ball. Put the dough into a deep oiled bowl and cover with plastic wrap. Let rise until doubled in size, 1 1/2 to 2 hours. Press the dough to deflate it.

Follow the recipe for Pizza Dough through step 1. Omit step 2 and instead combine the salt and half the flour in a deep bowl. Add the liquid ingredients and use a wooden spoon to combine. Add the remaining flour, stirring until a cohesive mass forms. Turn the dough onto a lightly floured work surface and knead until smooth and elastic 7 to 8 minutes, using as little dusting flour as possible while kneading. Form the dough into a ball, put it in a deep oiled bowl, cover with plastic wrap, and proceed with the recipe.

Follow the recipe for Pizza Dough through step 1. Omit step 2 and instead place the flour and salt in the bowl of a standing mixer fitted with the paddle. Briefly combine the dry ingredients at low speed. Slowly add the liquid ingredients and continue to mix at low speed until a cohesive mass forms. Stop the mixer and replace the paddle with the dough hook. Knead until the dough is smooth and elastic, about 5 minutes. Form the dough into a ball, put it in a deep oiled bowl, cover with plastic wrap, and proceed with the recipe.

Pepperoni and Cheese Bread


I was doing my usual surfing on all of the wonderful food blogs that I frequent and came across this recipe not only once, but twice! The first was on Amber's Delectable Delights and the second on Mrs Sac's Purple Kitchen. I thought if these two wonderful women like it then we must too! They did not disappoint and I have another pizza dish to add to our Pizza Friday rotation!

Pepperoni and Cheese Bread

Ingredients:

1 roll refrigerated french bread dough OR 1 loaf frozen bread dough (thawed)
Regular or turkey pepperoni
Mozzarella cheese
Parmesan cheese
Extra Virgin Olive oil
Dried Italian seasoning
My pizza sauce---I used Prego three cheese

Directions:

Preheat oven to 350.
Roll out bread dough, and drizzle with olive oil, a few small dollops of sauce, sprinkle with mozzarella, Parmesan cheeses, Italian seasoning, and place pepperoni on top of the cheese.

Carefully roll the bread dough into a cylinder shape. Pinch ends and top to seal. Brush top and sides with some olive oil.

If desired, top loaf with cheese, pepperoni, and/or Italian seasoning. Make a few diagonal slices in top of loaf for air to escape while cooking.
Bake at 350 for ~20 min. Remove from oven and let cool for 5 minutes before slicing.

Serve with pizza sauce.


I also made breadsticks with a can of Crescent rolls I had on hand. I seperated the crescents into the 4 rectangles that they naturally fall in. I cut each one in 1/2 and then into 1/2 again so each rectangle gave me 4 sticks. I then twisted each strip and placed on a foil lined baking sheet sprayed with cooking spray. I then sprayed the twists on cooking spray and then sprinkled parmesan cheese over them. I baked at 375 for 14 mins (which was a min or 2 too long) and then brushed them with 1/2 cup of butter that was melted and had 1 tsp of garlic powder added. They were very good!

Ina's Buttermilk Cheddar Biscuits


Ina is my new hero. Such simple ingredients and easy instructions. My mom gave me her Back To Basics cookbook for Christmas and I had seen the episode where she makes these for breakfast and looked so good. I tried one straight out of the oven and they are soooooo good!

Ingredients

2 cups all-purpose flour, plus more as needed
1 tablespoon baking powder
1 1/2 teaspoons kosher salt
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
1/2 cup cold buttermilk, shaken
1 cold extra-large egg
1 cup grated extra-sharp Cheddar
1 egg, beaten with 1 tablespoon water or milk
Maldon sea salt, optional

Directions
Preheat the oven to 425 degrees F.

Place 2 cups of flour, the baking powder, and salt in the bowl of an electric mixer fitted with the paddle attachment. With the mixer on low, add the butter and mix until the butter is the size of peas.

Combine the buttermilk and egg in a small measuring cup and beat lightly with a fork. With the mixer still on low, quickly add the buttermilk mixture to the flour mixture and mix only until moistened. In a small bowl, mix the Cheddar with small handful of flour and, with the mixer still on low, add the cheese to the dough. Mix only until roughly combined.

Dump out onto a well-floured board and knead lightly about 6 times. Roll the dough out to a rectangle 10 by 5 inches. With a sharp, floured knife, cut the dough lengthwise in half and then across in quarters, making 8 rough rectangles. Transfer to a sheet pan lined with parchment paper. Brush the tops with the egg wash, sprinkle with salt, if using, and bake for 20 to 25 minutes, until the tops are browned and the biscuits are cooked through. Serve hot or warm.

Hamburger Stew


This was a quick and easy was to use up some hamburger I had on hand. It's a mixture of recipes I found on Bisquick.com . It was comfort food on a plate. It will stay in our rotation of meals and will be nice to have on cold days!

1 pound hamburger browned and drained
2 jars beef gravy
1 can corn (Hubby's veggie of choice you could sub whatever you want)

2 1/4 cup bisquick
2/3 cup milk

mashed potatoes of your choice (we just made boxed)

Place hamburger back in skillet after drained, place gravy and veggies in skillet as well. Place over medium heat and bring to a boil.

Spray a 4 qt casserole dish with Pam. Pour stew into casserole dish. Mix Bisquick and milk together. Drop by tablespoons on top of stew. Bake at 425 for 20-25 minutes until biscuits are browned and stew is bubbly.

Meanwhile make mashed potatoes.

Serve stew over mashed potatoes with the biscuits along side.

"Red Lobster" biscuits


2 cups Bisquick
2/3 cup milk
1 cup shredded cheedar cheese
1/4 cup melted butter or margarine
1/2 tsp garlic powder

Mix Bisquick, milk and cheese together. Drop by rounded tablespoon on baking sheet. Bake at 450 for 8-10 minutes. Mix butter and garlic powder. Once taken out of the oven spread biscuits with butter mixture.

Honey Whole Wheat Bread

I love my "hand me down" bread maker that I got from my parents. The picture is on the mac n cheese plate! This is a really good bread. Once again the recipe came from Allrecipes!

2 cups whole wheat flour
1 cup bread flour
1/4 cup honey
1 1/2 tsp yeast
1 1/8 cup warm water
1/2 tsp salt
2 tbl butter

Put all ingredients in Bread Maker and put on light setting.

Garlic Knots



Update: I made these again 11/14/08 and since I didn't have any biscuits but I always have the new crescent recipe dough on hand I made them with those. I cut them in strips both ways and then kinda knotted them and then did the same butter and garlic powder...they were so good! I love the crescent dough!

This is my homemade take on those lovely little bites called Garlic Knots. We had the best ones at Sonny's Pizza in Eureka Springs on our Honeymoon. That's where the picture came from!

They were easy to make.

1 can refrigerated biscuits (I used a store brand can)
1 cup butter or margarine
probably about 2 Tbl Garlic Powder

Heat oven at 350, put the 1 cup of butter or margarine on pan with sides and melt in oven. In the meantime, cut biscuits in fourths. Sprinkle Garlic Powder over the melted butter. Roll cut biscuits in melted butter. Bake about 10 mins til golden brown.

Country Sausage Gravy


I can not believe I finally made home-made sausage gravy and can't believe even more how good and easy it was!

1 lb sausage
2 cups milk
1/2 cup flour
salt & pepper to taste
1 can biscuits

Brown sausage in skillet over med heat, drain. Add flour and cook 1 minute or until it starts to brown. Slowly add milk. Season with salt and pepper and cook until it has thickened.

Cook biscuits while making the gravy. Serve gravy over biscuits.

Mom's Cornbread


I'm finally back! I started cooking again this week and I have Girls Dinner Club tomorrow night. I know next week will be crazy. I will post as much as I can!

Mom's Cornbread

1 cup cornmeal
1 cup flour
1/2 cup sugar
4 tsp baking powder
1/2 tsp salt
Combine the above ingredients.

Add to it:
1 egg
1 cup milk
1/4 cup oil

Mix well, pour into a Pam sprayed square or round 9 inch pan. Bake at 425 for 20-25 minutes.

You can add cheese or red peppers to the batter before baking.

Parmeasan breadsticks

Okay this recipe came to be, because my husband has problems with crescent rolls coming home from the store. The first time, he had slammed on the brakes when we were driving home and a can rolled under the seat in my car. We didn't realize this and so a few days later (after really hot summer days) the can exploded all over my brand new car. So Friday night we go to the store and again buy crescent rolls. This time we are in his truck so the bag gets set in the back floor board. He is bringing all of the groceries in to me and brings me an open thing of crescent rolls. When he opened the truck door they slid out and hit the concrete. So I hop on Pilsbury.com to search for a recipe to use. I was making calzones and thought breadsticks would be a good thing to go with them!

1 can Crescent rolls
1/4 cup parmesan cheese
1/2 tbl parsley flakes
1/4 tbl garlic powder
2 tbl butter melted

Seperate rolls into 2 sections. Seal the perforations. Stir together the rest of the ingredients and spread on top on one of the sections. Then top with the other section, making sure to seal all of the sides/perforations. Cut into 6 strips. Twist each strip.

Brush 1 egg white on top and sprinkle with more parmesan cheese.

Bake at 375 for about 10 minutes until nice and golden.

Bread Machine Sweet White Bread

I really wanted to make a bread my mom always used to make. I got home and was really excited when I found her recipe in the bread machine, so I got started. I didn't really read the recipe. I put the yeast and water in and started to add the rest of the ingredients, when I got to powdered milk and sweet butter, I stopped, what are these? So a fast call to my mom to find out sweet butter is just salted butter and that the powder milk is just that, but I don't have any, so I went ahead and used what I had-Creamer-it was even vanilla flavor, well it's supposed to be a sweet bread so I didn't think it'd matter, and it didn't. The bread finally got done and I couldn't get it out quick enough. It was so good. I'm glad I finally pulled my mom's ole' bread machine out!

1 1/2 tsp dry yeast
1 3/4 c bread flour
3/4 tsp salt
3 Tbl sugar
1 Tbl dry milk
1 Tbl sweet butter (salted butter)
1 med egg
1/2 cup plus 1 tsp warm water

Put the yeast in the bowl with the warm water, put in rest of ingredients on top. Put on the light setting.
